Frog Ice Cream Sandwiches
Not only are these frog ice cream sandwiches adorable, they're also delicious. The recipe is decently straightforward, consisting of your favorite ice cream sandwiched between two green sugar cookies, decorated with royal icing. Although sandwiches take a few hours to make, most of the time is freeze or bake time, meaning that they don't actually require too much effort!
Frog Ice Cream Sandwiches
Makes 10 ice-cream sandwiches (20 cookies)
For the cookies:
2 1/2 cups all-purpose flour
1/4 cup corn starch
1/2 tsp baking powder
1/2 tsp kosher salt
1 cup softened unsalted butter
1 cup granulated sugar
1 large egg + 1 egg yolk
2 tsp vanilla extract
2-3 drops green food coloring
For the icing:
1 egg white
1 cup powdered sugar, approximately
Food coloring, black & pink
For the filling:
Ice cream, any flavor
Instructions:
1. Preheat the oven to 350F.
2. In a small bowl, mix together flour, corn starch, baking powder, and salt.
3. In a separate bowl, cream unsalted butter and sugar until light and fluffy. Add in vanilla extract, egg, and egg yolk, then beat until fully incorporated.
4. Add 2-3 drops green food coloring into butter mixture. Then add dry ingredients into the butter mixture and mix gently, until just incorporated.
5. To make the frogs, roll 35g (1.5 tbsp) of dough into a ball, then flatten slightly. Then, roll two 5g balls and place them right next to the flattened ball, as shown in the picture.
6. Bake for 8 minutes, and allow to cool on baking sheet for 2 minutes. While cooling, flatten the cookies with a measuring cup or another flat item.
7. Transfer cookies to freezer and freeze until completely cold while preparing icing.
8. To make the icing, whip the egg white until white and frothy, Then, while whipping, add in powdered sugar gradually until the icing is white and glossy. The texture should be thick, but still slightly runny. Split the icing into two bowls: add pink coloring to one, and black to the other.
9. Decorate cooled cookies as shown above (you only need to do this to half of the cookies, or 10 of them.) Using a toothpick works well.
10. Freeze cookies for 1-2 hours, until very cold and hard. Around 10-15 minutes before the cookies are done freezing, take the ice cream out of the freezer to soften.
11. Scoop ice cream onto half of the cookies, then top with another cookie. Place back into the freezer until ice cream is hard, then enjoy!
