Lemon Muffins

  

 

Lemon is such a great summer flavor, making these muffins a great summer treat. Only requiring one bowl, these muffins whip up in a flash. They're also quite healthy, thanks to coconut oil, whole wheat flour, and Greek yogurt. They make for a delicious breakfast or afternoon snack!

Tips: 
- Ensure all your ingredients are room temperature - this prevents the coconut oil from solidifying and keeps the batter smooth. 
- This recipe makes a smaller batch - feel free to double or triple it. 
- Whole wheat flour is used in this recipe, but it can be substituted with all-purpose flour. 

Lemon Muffins
Makes 9 muffins

Ingredients: 
3/4 cup all-purpose flour
1/4 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/4 cup melted coconut oil
1/4 cup sugar
1 large egg
1/3 cup plain greek yogurt
1 tsp vanilla extract
2 tbsp lemon juice
1 tbsp lemon zest


Instructions: 
1. Preheat oven to 350F and prepare a muffin tin. 

2. In a large bowl, beat coconut oil and sugar until well incorporated. Then, add in egg, greek yogurt, vanilla extract, lemon juice, and lemon zest, and mix until combined. 

3. Add flour, baking soda, baking powder, and salt. Fold gently until smooth and just combined.

4. Divide the batter evenly among 9 muffins. 

5. Bake for 15 minutes.
