Oat Energy Bites

I love oats in everything, especially these energy bites. Dipped in chocolate, they taste really good as a snack after a workout or in between classes and meetings. I typically store these in the freezer, since I like to make them in bulk once every month or two.

This recipe is pretty easy and fast - and only takes around 15 minutes to prepare from start to finish. 


Oat Energy Bites

Ingredients: 
1 banana (mashed, ripe)
⅓ cup peanut butter
¼ cup honey (less is fine) 
⅓ cup pecans 
2 tbsp chia seeds 
1 tsp cinnamon 
¼ tsp salt 
2 cups old-fashioned rolled oats
¼ cup dark chocolate chips
½ tsp coconut oil 

Instructions: 
1. Load bananas, peanut butter, and honey into blender or food processor, and blend until fully incorporated. 

2. Then, add in pecans, chia seeds, cinnamon, and salt, and pulse again. 

3. Lastly, add in rolled oats, and pulse until you reach the desired consistency. (I only pulse a few times for whole oats)

4. In a separate bowl, add dark chocolate chips and coconut oil, and melt in microwave or over a double boiler until fully melted. 

5. Shape the oat mixture into balls, and dip in chocolate. 

6. Enjoy immediately, or store in the freezer for later.
