Healthy Applesauce Oat Muffins


I make a lot of muffins, but not a lot of them can hit all my criteria: healthy, moist, and delicious. Usually, I'd factor in how they look as well, but with muffins as healthy and tasty as these, I don't really think appearances matter all that much.

These applesauce oat muffins are so perfect. With the addition of whole wheat flour and coconut oil, the muffins include a whole host of healthy ingredients. However, they're still super delicious, with the nuttiness of the whole wheat mixing beautifully with the sweet applesauce. 

Arguably even more importantly, these come together in a snap! I used just two bowls as well - one for the dry and one for the wet - making cleanup so so fast. 


Tips: 

- Take out the egg and milk beforehand to allow them to come to room temperature. 
- Take care to neither overmix nor overbake the muffins - this is critical for them to be as moist as possible!

Healthy Applesauce Oat Muffins

Ingredients: 
1 cup unsweetened applesauce
1/2 cup milk
1 large egg
4 tablespoons melted coconut oil
3/4 cup rolled oats
1/3 cup sugar (or less, these taste great even with little sugar)
1/2 cup all-purpose flour
1/4 cup whole wheat flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
pinch of salt

Instructions: 
1. Prepare a 12-cup muffin tin by lining it with muffin liners or greasing the cups. Preheat the oven to 375F.

2. In a medium-sized bowl, whisk together the wet ingredients - applesauce, milk, egg, and melted coconut oil. Then, add in the rolled oats and sugar, and mix well. 

3. In another large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt. 

4. Pour the wet ingredients into the dry ingredients, and whisk until just combined. Do not overmix!

5. Spoon the muffin batter evenly into the 12 muffin cups. Then, bake for 15-20 minutes. 

6. Remove the muffins from the oven and allow to cool before enjoying or freezing.
