Cream Cheese Snickerdoodle Cookies

Cookies, for some reason, have always been hard for me to get perfectly right. Though cookies are usually seen as "the easy" baked good, mine are always too hard, or too crumbly. But these cream cheese snickerdoodle cookies were a game-changer for me.
I know that the idea of putting cream cheese into a cookie sounds super weird, but it actually helps the cookie develop its signature texture. Trust me, these cookies are so soft. The cream cheese also gives the cookies a nice tang, making them taste like cheesecake in a cookie.
30 minutes before starting this recipe, make sure to take your egg, butter, and cream cheese out of the fridge to warm up!
Cream Cheese Snickerdoodle Cookies
Yield: 30 cookies
Ingredients:
6 tablespoons softened butter (85 grams)
5 ounces softened cream cheese (140 grams)
3/4 cup powdered sugar (85 grams)
1 egg (room temperature)
1/2 teaspoon baking powder
1 teaspoon vanilla extract
1/8 tsp salt
1 3/4 cups flour (210 grams)
1/8 cup granulated sugar
1 tsp cinnamon
Instructions:
1. In a large bowl, cream together the softened butter and cream cheese until completely incorporated. The resulting mixture should be fluffy and smooth. To the butter and cream cheese, slowly add in the powdered sugar and mix until completely combined.
2. Add in the egg, baking powder, vanilla extract, and salt, making sure each ingredient is fully incorporated before adding the next.
3. Gradually add the flour to the bowl, being sure not to overmix. Cover the bowl and place in the refrigerator for 1 hour to harden. This step is critical, and helps the cookies achieve their final texture. Don't skip it!
4. After 1 hour, preheat the oven to 350F. In a small bowl or plate, mix together sugar and cinnamon.
5. To shape the cookies, shape around 2 tsp of cookie dough into a bowl, before rolling in cinnamon sugar. Place the cookies two inches apart on a parchment-lined baking sheet, and flatten slightly.
6. Bake for 10 minutes at 350F. After removing from the oven, allow the cookies to cool for at least 10 minutes before enjoying.
