Easy Banana Nut Muffins
This recipe is so easy and takes literally 10 minutes of prep. It's also pretty difficult to mess up. The measurements don't have to be precise at all in order to produce wonderfully moist muffins.
This makes around 20 muffins, more than enough for an afternoon snack, breakfast, and another morning snack:)

2 cups all-purpose flour (240g)
2 1/2 tsp baking powder
1/2 tsp salt
300g mashed bananas (around 3 medium bananas or 2 large)
1/3 cup granulated sugar
1/4 cup vegetable oil
1/4 cup milk
2 large eggs
1/2 tsp cinnamon
1/2 cup walnuts, chopped; plus a handful more to sprinkle on top
1 medium-sized ripe banana, cut into small chunks
directions:
1. Combine the dry ingredients: flour, baking powder, and salt in a small bowl.
2. In a larger bowl, beat together the bananas and sugar. Add in the vegetable oil and milk, and stir thoroughly. Add in the eggs and cinnamon, and combine.
3. Add in the dry ingredients, followed by the walnuts and banana chunks, being careful not to overmix.
4. Distribute into liners, and bake for 5 minutes at 425F, then lower the temperature to 350F (without opening the oven) and bake for another 12 minutes.
