Almond Tuiles
These crispy almond cookies are not too sweet, and quite delicious. After looking at a bunch of different recipes, I tweaked this one to make the perfect crispy tuile.
Making the batter is pretty simple. Just stir together the flour and sugar, and add in the egg whites and salt. Stir in the almonds and melted butter.
Don't forget to put the batter in the fridge to chill for an hour! This step is extremely important and helps the cookie achieve its final, crispy texture. Don't skip it!
Almond Tuiles:
for the ingredients:
¼ cup sugar
40g plain flour
½ cup egg whites (approximately 3 large)
⅛ tsp salt
130g almond flakes
30g melted butter

making the batter:
1. Melt the butter.
2. Add sugar into a bowl, then sift in the flour. Pour in egg whites gradually while mixing, then add in salt.
3. Switch to a spatula and stir in almonds, then the melted butter.
4. Place the bowl in the fridge for 1 hour.
assembly and bake:
1. Use a fork and spread a ~tsp~on a Silpat. (such that no almonds are on top of each other)
2. Bake at 275F for 20 minutes.
